Spicy tofu recipe

Okay we got an easy one here. Today I made spicy tofu because I was trying to make the sizzling tofu from Max's Restaurant but I made a lousy mistake of putting the mayonnaise too early that's why it didn't become creamy like what they do at Max's. So since I made that stupid mistake, I decided to just go with the flow and put some secret ingredient (it's not a secret anymore I guess) in the recipe and I accidentally made a better, and spicier version, like what a sisig should be (if it ain't spicy, it ain't sisig)! So now let's get to it

Ingredients:
1 medium block firm tofu (cubed)
2pcs green chili (sliced)
1 thumb ginger (minced)
3 cloves garlic (minced)
1 medium-sized onion (minced)
2 tbsp oyster sauce
1/4 cup mayonnaise
1 tbsp chili black bean paste
1 tbsp cooking wine
Salt
Ground pepper




Procedure:
Fry the tofu cubes first before anything else. The key here is to just brown the exterior of the tofu but don't cook it all the way through. This helps ensure that the tofu is soft and will be able to absorb all the sauce in the pan. This should take around 4-6 minutes depending on the heat and set aside on a strainer when done.
Now saute the ginger, garlic, and onion (in that order) until fragrant. They should take around 30 seconds to brown and be careful with your temperature because you have to avoid burning the garlic.
Now add in the chili paste and chili then splash in the cooking wine. Stir continuously until all the alcohol from the wine has evaporated (you can tell it from the smell).
The sauce should be red by now, time to add the tofu back into the pan and mix until the sauce has been incorporated with tofu. Cook for a good 2 minutes under high heat with continuous stirring.
Finally, add in the mayonnaise and the oyster sauce and mix well until the oil from the mayonnaise has separated (it should be around 2 minutes). If you want it to be on the creamy side, add the oyster sauce first and cook for 2 minutes then turn off the heat then add the mayonnaise. The latter may be creamier but less spicy than the former.
Season with salt and pepper then serve!
